Method
 

Step-by-Step Instructions
  1. Line an 8x8-inch baking dish with foil or parchment paper, leaving some overhang for easy removal. Lightly spray with cooking spray.
  2. In a double boiler, combine chocolate chips, butter, sweetened condensed milk, and hot chocolate mix. Stir over medium heat for about 8-10 minutes until melted and smooth.
  3. Mix in mini marshmallows for about 1 minute until slightly softened and incorporated into the chocolate mixture.
  4. Remove from heat and add vanilla extract, mixing until evenly combined.
  5. Pour the fudge mixture into the prepared baking dish, spreading evenly. Press remaining marshmallows onto the top.
  6. Refrigerate for at least 4 hours, or until set.
  7. Once set, cut into squares and drizzle with melted chocolate if desired.
