- In a skillet over medium heat, drizzle a little oil and add shredded, cooked chicken. Sprinkle in spices and stir well for 3-5 minutes until heated through.
- Lay one tortilla flat and spread a layer of seasoned chicken on one half. Sprinkle cheese over chicken and add spinach if desired. Fold the tortilla over.
- Heat a non-stick skillet over medium heat. Place quesadilla on skillet, cooking for 3-4 minutes on each side until golden-brown.
- Remove quesadilla from skillet and let rest for a couple of minutes. Cut into wedges.
- Serve warm quesadilla wedges on a platter with salsa, guacamole, and sour cream for dipping.
