Preparation
- Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
- In a small bowl, combine 1/2 cup of brown sugar with 1 tablespoon of ground cinnamon and set aside.
- In another bowl, whisk together 2 cups of all-purpose flour and 1 tablespoon of baking powder.
- In a large mixing bowl, cream 1/2 cup of softened butter with 1 cup of granulated sugar until light and fluffy.
- Beat in 2 room temperature eggs one at a time, then add 1 teaspoon of vanilla extract.
- Gradually add the flour mixture to the wet ingredients, alternating with 1/2 cup of milk.
- Peel and chop 2-3 firm apples and toss them with a sprinkle of cinnamon and sugar.
- Pour half of the batter into the loaf pan, layer the cinnamon-sugar mixture and half of the apple filling, then top with remaining batter and apples.
- Bake for about 60 minutes; check for doneness with a toothpick.
- Cool in the pan for 15 minutes, prepare glaze by mixing 1 cup of powdered sugar with milk.
- Flip onto a wire rack and drizzle the glaze over the top.
