  • 2 pounds Stew Meat (or Chuck) Beef tenderloin can be used for a premium option.

  • 1 tablespoon Italian Seasoning Can be replaced with dried oregano, basil, and thyme.
  • 1 teaspoon Fresh Thyme Adjust quantity if using dried thyme.
For Thickening
  • 2 tablespoons Cornstarch
  • ¼ cup Water
For Serving
  • 4 cups Mashed Potatoes (or Rice/Egg Noodles) Choose your favorite starch.

Method
 

Step‑by‑Step Instructions for Instant Pot Beef Tips & Gravy
  1. Turn your Instant Pot to ‘Sauté’ mode and heat the oil for 2-3 minutes.
  2. Season stew meat with salt and pepper, brown the meat in batches for 5-7 minutes.
  3. Add remaining oil, sauté diced sweet onion for 5 minutes. Add minced garlic and cook for 30 seconds.
  4. Pour in beef broth and scrape up bits from the bottom of the pot.
  5. Return browned beef to pot, add Worcestershire sauce, bay leaf, Italian seasoning, and thyme. Stir well.
  6. Lock lid, set to high pressure for 25 minutes, and allow natural pressure release for 10 minutes.
  7. Switch to ‘Sauté’ mode and mix cornstarch with water until dissolved. Stir into the pot to thicken the gravy.
  8. Serve beef tips and gravy over mashed potatoes, rice, or egg noodles, garnished with parsley.
