Preparation of Flan
- In a mixing bowl, combine flour, icing sugar, cocoa powder, and salt. Add melted butter and vanilla, mixing until a soft dough forms. Press into a tart pan and refrigerate for 30 minutes.
- Preheat the oven to 350°F (175°C). Line the tart shell with parchment paper and fill with weights. Bake for 15 minutes, then cool on a wire rack.
- In a saucepan, whisk egg yolks, whole eggs, sugar, cornstarch, and salt. Gradually add milk and cream, heating until thickened. Stir in dark chocolate until melted.
- Pour the custard into the cooled tart shell and smooth the top. Bake for 25-30 minutes until set but still slightly wobbly.
- Cool at room temperature for 1 hour, then brush with jam and refrigerate for at least 4 hours before serving.
