- Cook the pasta shells by bringing a pot of salted water to a boil. Add the pasta shells and cook for 8–10 minutes until al dente. Drain and rinse under cold water. Set aside.
- Prepare the sauce by melting butter in a large skillet over medium heat. Whisk in flour, and add heavy cream, milk, and white wine. Cook until sauce thickens.
- Cook the seafood in the same skillet with the sauce. Add chopped shrimp and lobster, cooking for 4–5 minutes until just cooked through. Set aside to cool.
- Make the filling by combining cream cheese, cooked seafood, crab meat, spinach, mozzarella, Parmesan, and seasonings in a mixing bowl. Mix until creamy.
- Assemble the dish by preheating oven to 350°F. Spread sauce in a baking dish, stuff each shell with filling, and pour remaining sauce over them. Top with more mozzarella.
- Bake covered for 25 minutes, then remove foil and bake for an additional 10–15 minutes until cheese is melted and golden. Let rest before serving.
