Ingredients
  

For the Steak
  • 1 pound Flank Steak Slice against the grain
  • 1 tablespoon Olive Oil Substitute with avocado oil if desired
  • 1 tablespoon Chili Powder Adjust for milder taste
  • 1 teaspoon Cumin
  • 1 teaspoon Garlic Powder Fresh garlic can be used
  • 1 teaspoon Smoked Paprika
  • to taste Salt & Black Pepper Always taste and adjust
  • 1 teaspoon Onion Powder
For the Veggies
  • 1 medium Bell Pepper Sliced
  • 1 medium Onion Sliced
For the Bowl
  • 1/2 cup Cooked Brown Rice Can substitute for quinoa or cauliflower rice
  • 1/4 cup Black Beans
  • 1/4 cup Corn Kernels
For the Toppings
  • 1 tablespoon Fresh Cilantro Chopped
  • 1/4 cup Greek Yogurt Can substitute with sour cream
  • 1 tablespoon Lime Juice Fresh preferred

Method
 

Step-by-Step Instructions
  1. Heat a large skillet or grill pan over medium-high heat for about 5 minutes.
  2. Season the flank steak generously on both sides with chili powder, cumin, garlic powder, smoked paprika, salt, black pepper, and onion powder.
  3. Add a tablespoon of olive oil to the hot skillet.
  4. Place the seasoned flank steak in the skillet and sear for about 4-5 minutes per side.
  5. Remove the steak from the skillet and let it rest for 5 minutes before slicing.
  6. In the same skillet, add sliced bell pepper and onion, cooking for about 3-4 minutes.
  7. Combine the warm cooked brown rice, black beans, and corn in a mixing bowl.
  8. Assemble your bowl with the rice mixture at the bottom, followed by the sautéed veggies and sliced steak.
  9. Top with Greek yogurt, chopped cilantro, and lime juice.
  10. Serve while warm and enjoy!
