  • 8 oz whole wheat or protein-enriched pasta for added nutrition
For the Sauce
  • 1 lb lean ground beef opt for 90% lean
  • 1 tbsp olive oil or any cooking oil
  • 3 cloves garlic minced or garlic powder
  • to taste salt for seasoning
  • to taste pepper for seasoning
  • 2 tbsp tomato paste for depth of flavor
  • 1 cup milk or broth whole milk or beef broth
  • 1 cup Greek yogurt or cream cheese for creaminess
  • 1/2 cup Parmesan cheese freshly grated
For Garnish
  • 2 tbsp chopped parsley or basil as an alternative

Method
 

Step-by-Step Instructions
  1. In a large pot, bring salted water to a rolling boil over high heat. Add pasta and cook according to package instructions until al dente, about 8-10 minutes. Reserve ½ cup of pasta water, then drain the pasta.
  2. In a large skillet over medium heat, add olive oil. Then, add ground beef and minced garlic, breaking apart the meat while cooking for 6-8 minutes until browned.
  3. Stir in tomato paste into the beef mixture and cook for an additional minute.
  4. Pour in milk or broth into the skillet, simmer for 3-4 minutes until slightly thickened.
  5. Mix in Greek yogurt or cream cheese until smooth and creamy, cooking for another 2-3 minutes.
  6. Add drained pasta to the skillet, tossing to coat. If too thick, stir in reserved pasta water to adjust consistency.
  7. Sprinkle freshly grated Parmesan cheese, taste and adjust seasoning with more salt or pepper. Garnish with chopped parsley before serving.
