Ingredients
  

For the Chowder Base
  • 4 cups Potatoes Russets or Yukon Golds
  • 1 lb Sausage Pork, turkey, or chicken
  • 1 medium Onion
  • 3 cloves Garlic minced
  • 2 medium Carrots diced
  • 2 stalks Celery chopped
For the Broth
  • 4 cups Chicken broth or vegetable broth
  • 1 cup Heavy cream or half-and-half
  • 1 cup Whole milk or low-fat coconut milk
For Seasoning
  • 2 tbsp Butter for sautéing
  • 1 tsp Dried thyme
  • 1 tbsp Salt to taste
  • 1 tsp Black pepper to taste
  • 2 tbsp Paprika
  • 1/4 cup Flour for thickening

Directions
  1. Step 1: Brown the Sausage. Heat a large pot over medium heat, add sausage, and sauté for 7-10 minutes until browned. Remove sausage, leaving the fat.
  2. Step 2: Sauté the Aromatics. In the same pot, melt butter, add chopped onion and sauté for 3-4 minutes until softened.
  3. Step 3: Add Garlic and Vegetables. Mix in minced garlic and stir for 30 seconds. Add diced carrots and chopped celery, cooking for another 3-4 minutes.
  4. Step 4: Incorporate the Flour. Sprinkle flour over the vegetables, stirring for 1-2 minutes to eliminate any raw taste.
  5. Step 5: Gradually Add the Broth. Slowly pour in chicken broth while stirring to prevent lumps until smooth, then simmer gently.
  6. Step 6: Add the Potatoes and Seasonings. Add diced potatoes, thyme, salt, pepper, and paprika, stirring to combine.
  7. Step 7: Simmer to Perfection. Bring to a boil, reduce heat and cover, letting it simmer for 20-25 minutes until potatoes are fork-tender.
  8. Step 8: Finish with Sausage and Cream. Add cooked sausage and stir in heavy cream and milk, heating for another 5 minutes.
  9. Step 9: Taste and Serve. Adjust seasonings and serve hot, garnished with fresh herbs or cheese if desired.
