  • 1 medium Avocado Slice fresh before serving.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). Cube sweet potatoes into 1-inch pieces and prepare taco seasoning.
  2. Toss sweet potato cubes with olive oil and half of the taco seasoning. Spread on a baking sheet and roast for 30-35 minutes.
  3. In a skillet, cook ground beef over medium heat for 8-10 minutes, adding remaining taco seasoning.
  4. Assemble bowls with roasted sweet potatoes and ground beef.
  5. Add cottage cheese and sliced avocado to the top.
  6. Drizzle with hot honey before serving.
