  • 1 can Beans Black or pinto beans, drained and rinsed.
  • 1 packet Taco Seasoning Store-bought or homemade.
Toppings
  • 1 cup Cheese Cheddar or Monterey Jack, shredded.
  • 8 tortillas Tortillas Whole wheat or corn.
  • 2 cups Fresh Vegetables Lettuce, tomatoes, and onions, chopped.
  • 1 cup Sour Cream or Greek Yogurt Low-fat optional.
  • 1 cup Salsa Mild or hot, according to taste.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and prepare your vegetables.
  2. Gather and dice your fresh vegetables, rinse and drain the beans, and measure out the taco seasoning.
Cooking
  1. In a large skillet, cook the ground beef over medium heat until fully browned.
  2. Stir in the beans and taco seasoning, cooking for a few more minutes.
Assembly
  1. Layer tortillas in a baking dish, followed by the beef mixture and cheese.
Baking
  1. Bake for 15-20 minutes until cheese is bubbly and golden.

  1. Prepare toppings while tacos are baking and serve hot.
