Ingredients
  

For the Dough
  • 2 cups Flour plain or gluten-free
  • 2 tablespoons Extra Virgin Olive Oil
  • 1 cup Water
  • 1 teaspoon Salt
For the Spinach and Feta Filling
  • 2 cups Spinach (Baby) substitute with other greens if desired
  • 2 cloves Garlic minced
  • 2 large Eggs beaten
  • 1 teaspoon Black Pepper
  • 100 grams Danish Feta or Greek feta
  • 1 cup Shredded Mozzarella Cheese optional
For the Spiced Meat Filling
  • 500 grams Ground Lamb or Beef or chicken/turkey
  • 1 medium Onion chopped
  • 1 medium Capsicum (Bell Pepper) any color
  • 1 teaspoon Cumin Powder
  • 1 teaspoon Paprika
  • 1/2 teaspoon Cayenne adjust to taste
For Serving
  • 2 pieces Lemon Wedges

Method
 

Prepare the Dough
  1. In a stand mixer, combine flour, extra virgin olive oil, salt, and water. Mix on medium speed until a smooth dough forms, about 5–7 minutes. Cover and let it rest for 20 minutes.
Prepare the Fillings
  1. For the Spinach and Feta filling, wilt spinach in a skillet over medium heat until tender, about 2–3 minutes. Combine spinach, garlic, eggs, and feta in a bowl.
  2. For the Spiced Meat filling, sauté onion and garlic in the skillet for 5 minutes, then add capsicum. Stir in ground meat and spices, cooking until browned, about 8–10 minutes.
Shape Gozleme
  1. Divide dough into portions and roll each into a rectangle, 1/8 inch thick. Spread filling on one half, fold over and seal edges.
Cook Gozleme
  1. Heat a non-stick skillet over medium heat with olive oil. Cook each gozleme for 3–4 minutes per side until golden and crispy.
Serve
  1. Let cooked gozleme cool slightly before slicing. Serve warm with lemon wedges.
