For the Pudding
  • 1 cup Cold Water For cooking rice
  • 1/2 cup Uncooked White Rice Can substitute with brown rice
  • 480 ml Milk Divide into two portions
  • 67 g White Sugar Adjust to taste
  • 1 g Salt Can be omitted for low sodium
  • 1 large Egg Beaten, can use cornstarch and milk for vegan
  • 100 g Golden Raisins Substitute with dried cranberries if desired
  • 14 g Butter Leave out for dairy-free option
  • 2.5 ml Vanilla Extract Almond extract can be used instead

Method
 

Cooking Steps
  1. In a medium saucepan, bring 1 cup of cold water to a boil over high heat. Stir in 1/2 cup of uncooked white rice, reduce heat to low, cover, and let simmer for about 20 minutes until the water is absorbed.
  2. Combine the cooked rice with 360ml of milk, 67g of white sugar, and a pinch of salt in a new saucepan. Set heat to medium and simmer for about 15 minutes, stirring frequently until thickened.
  3. Lower heat and stir in the remaining 120ml of milk, the beaten egg, and 100g of golden raisins. Stir for about 2 minutes, ensuring the egg doesn’t scramble.
  4. Remove from heat and mix in 14g of butter and 2.5ml of vanilla extract. Stir until butter melts and adjust sweetness if necessary.
  5. Spoon into serving bowls and sprinkle with cinnamon or nutmeg. Serve warm.
