Ingredients
  

For the Cheesecake Filling
  • 8 oz Cream Cheese Use full fat for best results.
  • 3 tbsp Granulated Sugar Can use a sugar alternative.
  • 1/2 tsp Vanilla Extract Almond extract can be used instead.
For the Cookie Dough
  • 2 1/2 cups All-Purpose Flour Gluten-free flour may work.
  • 1 tsp Baking Soda
  • 1 pinch Salt Use kosher or fine sea salt.
  • 1 tbsp Ground Spices Ginger, cinnamon, nutmeg, adjust to taste.
  • 3/4 cup Unsalted Butter Vegan butter can be used.
  • 3/4 cup Light Brown Sugar Adds moisture.
  • 2 large Egg Yolks Acts as a binder.
  • 1/3 cup Unsulphured Molasses Light or dark can be substituted.
For the Topping
  • 1 cup Granulated Sugar For rolling cookies.

Method
 

Cheesecake Filling Preparation
  1. In a mixing bowl, combine cream cheese, granulated sugar, and vanilla extract. Use an electric mixer to blend on medium speed until fluffy and smooth, about 2-3 minutes. Scoop the filling into small balls and freeze until firm, approximately 2 hours.
Cookie Dough Preparation
  1. In a large bowl, whisk flour, baking soda, salt, and ground spices together. In another bowl, cream together butter and brown sugar until light and fluffy, about 5 minutes. Beat in egg yolks, molasses, and vanilla until well mixed.
Combining Ingredients
  1. Slowly add dry flour mixture to the wet mixture, stirring gently until just combined. Cover with plastic wrap and refrigerate for about 30 minutes.
Assembly
  1. Preheat oven to 350°F (175°C). Portion the chilled cookie dough and flatten slightly. Place a frozen cheesecake ball in the center of each disc and wrap the dough around it. Roll in spiced sugar before placing on baking sheets.
Baking
  1. Bake for 11-12 minutes until set at the edges and slightly puffed in the center. Cool on baking sheets for about 10 minutes before transferring to a wire rack.
