- In a medium saucepan, melt 2 tablespoons of unsalted butter or ghee over medium heat. Once melted, add 1 cup of finely diced onions and sauté for 3-4 minutes until softened and translucent.
- Stir in 4 minced garlic cloves and continue cooking for an additional minute. Be careful not to let it brown.
- Sprinkle in 1 teaspoon of turmeric powder, mixing thoroughly for about 30 seconds. Next, add 2 cups of rinsed and drained basmati rice, stirring continuously for about 1 minute.
- Pour in 3 cups of chicken or vegetable stock and sprinkle with ½ teaspoon of salt. Increase the heat to high and bring to a gentle boil.
- Once boiling, reduce the heat to low, cover with a lid, and simmer for 15 minutes.
- Remove from heat and let it sit, covered, for an additional 5 minutes. Fluff the rice gently with a fork.
- Drizzle 1-2 tablespoons of fresh lemon juice over the rice and fluff again. Garnish with fresh parsley or cilantro if desired.
