  • 1 teaspoon Italian Seasoning
For Seasoning
  • 1 teaspoon Salt Adjust to taste
  • 1/2 teaspoon Black Pepper Freshly ground
For Garnish
  • 2 tablespoons Fresh Parsley Chopped, optional

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash and trim the ends off the zucchinis, then slice them into even coins about ½ inch thick.
  3. In a large mixing bowl, drizzle the zucchini slices with olive oil and add the minced garlic, tossing to coat.
  4. Add grated Parmesan cheese, Italian seasoning, salt, and black pepper to the bowl, mixing thoroughly.
  5. Spread the seasoned zucchini slices on the prepared baking sheet in a single layer.
  6. Roast the zucchini for 15-20 minutes or until golden brown and tender.
  7. Remove from the oven, allow to cool for about 5 minutes, and garnish with fresh parsley before serving.
