Step‑by‑Step Instructions
  1. Preheat a large skillet or wok over medium-high heat for about 2 minutes. Add 2 tablespoons of vegetable oil and swirl it around to coat the bottom.
  2. Add diced carrots to the skillet, stir-frying for 2-3 minutes until they start to soften.
  3. Sprinkle in frozen peas and cook for an additional 1-2 minutes, stirring frequently.
  4. Push the sautéed vegetables to one side and crack in 2 eggs, stirring gently until fully cooked.
  5. Add 3 cups of day-old rice and drizzle in 3 tablespoons of soy sauce, tossing everything together.
