- Grease a baking pan and line it with parchment paper, letting the edges overhang.
- Combine sugar, corn syrup, and water in a saucepan. Stir until moistened and bubble over medium heat for about 5 minutes.
- Increase heat to medium-high and cook until reaching hard crack stage (300°F) without stirring, about 10-15 minutes.
- Remove from heat. Add cinnamon oil and food coloring, stirring quickly.
- Pour the hot mixture into the prepared pan, spreading evenly while avoiding air bubbles.
- Let the candy cool at room temperature for about 20 minutes until hard.
- Once cool, lift out of the pan using parchment edges and break into shards.
- Store in an airtight container with layers of parchment to prevent sticking.
