Ingredients
  

For the Pasta
  • 8 oz Pasta (spaghetti or fettuccine) any preferred shape
For the Sauce
  • 3 tbsp Butter or olive oil for a lighter version
  • 2 tbsp Flour all-purpose or gluten-free alternatives
  • 3 cloves Garlic fresh, minced
  • 2 cups Chicken or Vegetable Broth can use wine for a twist
  • 1/2 cup Lemon Juice freshly squeezed
  • 1 tsp Italian Seasoning or fresh herbs
  • 1 cup Heavy/Whipping Cream or half-and-half
  • 1-2 cups Fresh Corn thawed frozen corn works as substitute
  • 1/2 cup Parmesan Cheese or any preferred grated cheese
  • 1 cup Fresh Basil for garnish
  • Salt & Pepper to taste

Method
 

Cooking Instructions
  1. Boil the Pasta: Fill a large pot with water, add salt, and bring to a boil. Cook pasta until al dente, about 8-10 minutes. Drain, reserving a cup of cooking water.
  2. Prepare the Roux: In a skillet, melt butter over medium heat. Stir in flour for 1-2 minutes until golden to create a roux.
  3. Add Garlic and Broth: Sauté garlic in the roux for 30 seconds. Gradually pour in broth, lemon juice, and Italian seasoning. Bubble gently for 30 seconds.
  4. Create the Creamy Sauce: Whisk in heavy cream and fold in corn. Simmer for 3-5 minutes, allowing the sauce to thicken.
  5. Combine Cheese and Herbs: Stir in Parmesan and basil. Remove from heat and let rest for a minute.
  6. Toss the Pasta: Add pasta to the sauce and toss to combine. Adjust sauce thickness with reserved pasta water if necessary.
  7. Serve and Garnish: Serve warm, garnished with extra basil and a sprinkle of Parmesan.
