Ingredients

For the Custard
  • 4 large egg yolks Provide richness and act as a thickening agent for the custard.
  • 2 cups whole milk The primary liquid that contributes creaminess and flavor; substitute with almond milk for a dairy-free version.
  • 1/2 cup sugar Adds sweetness; adjust to your preference for a more or less sugary custard.
  • 1 teaspoon vanilla extract Enhances flavor; use pure extract for the best taste.
  • 2 tablespoons cornstarch Acts as a thickener; ensure it dissolves fully to prevent lumps.
  • 2 tablespoons unsalted butter Adds smoothness and richness; can be omitted for a lighter version.
  • 2 medium ripe bananas Provides the main flavor; use ripe bananas for maximum sweetness.
  • 1 cup sliced bananas Optional, perfect for garnishing.
For Serving

  • whisk
  • Fine mesh sieve
  • heat-safe thermometer

Method

Step-by-Step Instructions for Easy Banana Custard
  1. In a large saucepan, pour in whole milk and heat over medium heat until it begins to simmer, then reduce heat to low and stir in half of the sugar until fully dissolved.
  2. In a medium bowl, combine the remaining sugar and cornstarch. Whisk these together until smooth, then add in the egg yolks and mix well.
  3. Gradually pour the egg yolk mixture into the simmering milk, stirring continuously with a whisk. Keep the heat low and monitor closely, as the custard will thicken after about 3-5 minutes.
  4. Use a heat-safe thermometer to check the custard’s temperature while it thickens, aiming for about 185°F.
  5. Once thickened, remove from heat and stir in softened unsalted butter, pure vanilla extract, and the mashed banana.
  6. Strain the custard through a fine-mesh sieve into a bowl to catch any lumps. Cover with plastic wrap directly on the surface and refrigerate for at least 30 minutes.
  7. Once chilled, stir the custard gently before serving. Optionally fold in sliced bananas just before serving.
