Method
 

Steps for Meatballs In Lemon Sauce
  1. Soak crustless bread in white wine for about 5 minutes in a small bowl.
  2. In a large mixing bowl, combine ground pork, ground beef, egg, minced onion, minced garlic, dried oregano, dried parsley, ground cumin, salt, and pepper.
  3. Add the soaked bread to the meat mixture and mix until well combined.
  4. Shape mixture into approximately 15 oval meatballs, each about 65-70 grams.
  5. Cover meatballs with plastic wrap and chill in the refrigerator for about 1 hour.
  6. Heat olive oil in a large skillet over medium-high heat and sear the meatballs for about 4 minutes on each side until browned.
  7. Remove meatballs to drain excess oil and lower heat, adding butter to melt.
  8. Add flour to the skillet and cook for 2-3 minutes, stirring continuously.
  9. Gradually whisk in hot water or stock and lemon juice until sauce thickens.
  10. Return seared meatballs to skillet, cover, and simmer for about 20 minutes.
  11. Serve meatballs in lemon sauce, garnish with cracked pepper and dried oregano.
