Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 9x5 or 8x4 inch loaf pan.
  2. In a large mixing bowl, crack and beat the eggs for 1-2 minutes until frothy.
  3. Add sugar, yogurt, melted coconut oil, fresh orange juice, orange zest, and vanilla extract to the beaten eggs and blend until smooth.
  4. Gradually mix in gluten-free flour, almond flour, baking powder, baking soda, ground cardamom, and salt. Stir until just combined.
  5. Pour the batter into the greased loaf pan and bake for 40-45 minutes until a toothpick comes out clean.
  6. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool for 2 hours.
  7. For the glaze, whisk together powdered sugar, fresh orange juice, vanilla extract, orange zest, and a pinch of cardamom.
