Caramel Layer
  • 0.5 cup coconut oil Essential for making silky caramel
  • 0.5 cup maple syrup Used for sweet binding properties
  • 1 pinch salt
Coating and Topping
  • 1 cup dark chocolate Use vegan chocolate for strict adherence
  • 0.5 cup almonds Can be substituted with any chopped nuts

Method
 

Nougat Preparation
  1. In a mixing bowl, combine almond butter, pea protein powder, maple syrup, coconut flour, and a pinch of salt. Mix until sticky and dough-like.
  2. Gradually add water if too dry until it holds together like play dough.
Pressing Nougat
  1. Line a baking pan with parchment paper. Transfer the nougat mixture into the pan and press it down into an even layer.
Caramel Making
  1. In a saucepan, combine coconut oil, maple syrup, and a pinch of salt. Heat over medium and stir continuously for 6-7 minutes until thickened.
Caramel Spreading
  1. Remove the caramel from heat and allow it to cool slightly. Pour it over the nougat and spread evenly.
Chill Layers
  1. Place the pan in the freezer for 15-20 minutes until firm to the touch.
Coating with Chocolate
  1. Melt dark chocolate in a microwave-safe bowl in 20-second intervals until smooth. Cut the chilled bars into 8 pieces and dip each into the melted chocolate.
Setting
  1. Allow the coated bars to set at room temperature or in the refrigerator until the chocolate hardens completely.
