Step-by-Step Instructions for Healthy Oatmeal Bars Breakfast
- Preheat your oven to 375°F (190°C) and line a 9x9 inch baking dish with parchment paper.
- In a saucepan, combine frozen berries, lemon juice, coconut sugar, maple syrup, and sea salt. Cook for about 5-10 minutes until berries break down.
- Mix tapioca starch with a couple of tablespoons of berry liquid until smooth, then stir into the berry mixture and heat for an additional minute.
- Blend rolled oats, almond flour, baking soda, and sea salt. Pour in maple syrup, vanilla extract, and softened coconut oil, and mix until crumbly.
- Set aside ½ to ¾ cup of the oatmeal mixture and press the remaining mixture into the bottom of the prepared baking dish.
- Spread the thickened berry mixture evenly over the pressed oatmeal base in the baking dish.
- Sprinkle the reserved oatmeal mixture over the top of the berry filling, covering thoroughly.
- Bake for 20-25 minutes until the edges are lightly golden brown.
- Let cool completely in the pan before slicing into portions.
- Store leftovers in an airtight container in the fridge for up to a week.

Notes
For best results, use solid coconut oil and ensure fruits are cut to an even size for consistent cooking. The bars should cool completely before slicing for the best texture.
