- Preheat your oven to 400°F (200°C).
- Divide the cherry tomatoes, red bell pepper, red onion, and minced garlic among oven-safe dishes. Nestle the feta cheese in the center, or combine in a large dish.
- Mix together the dried oregano, sea salt, dried thyme, ground black pepper, and red pepper flakes in a small bowl. Sprinkle evenly over the mixture.
- Bake for about 25 minutes until the vegetables are tender and the feta is golden.
- Gently stir the mixture and fold in the chopped baby spinach. Create wells and crack an egg into each.
- Return to the oven and bake for an additional 10 minutes or until whites are set but yolks are runny.
