Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Divide the cherry tomatoes, red bell pepper, red onion, and minced garlic among oven-safe dishes. Nestle the feta cheese in the center, or combine in a large dish.
  3. Mix together the dried oregano, sea salt, dried thyme, ground black pepper, and red pepper flakes in a small bowl. Sprinkle evenly over the mixture.
  4. Bake for about 25 minutes until the vegetables are tender and the feta is golden.
  5. Gently stir the mixture and fold in the chopped baby spinach. Create wells and crack an egg into each.
  6. Return to the oven and bake for an additional 10 minutes or until whites are set but yolks are runny.
  7. Remove from the oven and optionally garnish with fresh basil or chives before serving warm.
