Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Gather all your fresh vegetables and get your baking dish ready for greasing.
  2. Lightly grease a 9x13 inch baking dish with cooking spray or olive oil.
  3. Combine the cottage cheese, broccoli florets, chopped bell pepper, zucchini, halved cherry tomatoes, spinach, and diced red onion in a large bowl.
  4. Whisk together the eggs, olive oil, garlic powder, onion powder, salt, pepper, and dried oregano until smooth.
  5. Pour the egg mixture over the vegetable blend and stir to coat all ingredients evenly.
  6. Spread the veggie mixture evenly into the prepared baking dish, leveling the top.
  7. Sprinkle a generous layer of shredded mozzarella cheese over the top.
