- Cook the Sago: Bring 2 cups of water to a boil. Add ½ cup of sago pearls, reduce to low, and simmer for about 15 minutes, stirring occasionally. Remove from heat and let sit for 10-15 minutes.
- Cool the Sago: Strain and rinse the sago under cold water. Keep submerged in fresh cold water.
- Make Matcha Milk: Sift matcha powder, whisk in hot water until smooth. Combine with 1 cup of milk to make matcha milk.
- Combine Ingredients: In a bowl, mix sago, evaporated milk, condensed milk, matcha milk, strawberries, and coconut jelly. Optionally add heart jelly. Fold gently.
- Assemble and Serve: Divide into cups, add ice if desired, and enjoy immediately.
