- Heat the oil in a large, heavy-bottomed pot over medium heat.
- Carefully add the beef stew meat to the pot, searing for 5-7 minutes until browned.
- In the same pot, add onion and garlic, stirring for 3-4 minutes until the onion is translucent.
- Add the sliced carrots and diced potatoes, cooking for another 5 minutes.
- Return the browned beef to the pot, pour in beef broth, and add thyme, bay leaf, salt, and pepper.
- Bring to a simmer, cover, and cook on low for 1.5 hours.
- For thickness, mix flour with cold water and stir into the pot in the last 10 minutes.
- Remove bay leaf and garnish with chopped parsley before serving.
