  • 2 tablespoons olive oil for browning the meat
  • 2 pounds beef stew meat or substitute with chuck roast or lamb
  • 1 onion chopped
  • 2 cloves garlic minced
  • 2 carrots sliced, or substitute with parsnips
  • 2 potatoes diced, Yukon Gold preferred
  • 4 cups beef broth or vegetable broth for lighter option
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • to taste salt
  • to taste pepper

Method
 

Cooking Steps
  1. Heat the oil in a large, heavy-bottomed pot over medium heat.
  2. Carefully add the beef stew meat to the pot, searing for 5-7 minutes until browned.
  3. In the same pot, add onion and garlic, stirring for 3-4 minutes until the onion is translucent.
  4. Add the sliced carrots and diced potatoes, cooking for another 5 minutes.
  5. Return the browned beef to the pot, pour in beef broth, and add thyme, bay leaf, salt, and pepper.
  6. Bring to a simmer, cover, and cook on low for 1.5 hours.
  7. For thickness, mix flour with cold water and stir into the pot in the last 10 minutes.
  8. Remove bay leaf and garnish with chopped parsley before serving.
