- While the potatoes are boiling, heat 2 tablespoons of butter or olive oil in a skillet. Add the chopped shallots and minced garlic, sautéing for 1-2 minutes until softened. Add the chopped kale with ¼ cup of water, cover and steam until wilted, about 4-5 minutes.
- Return the drained potatoes to the pot on low heat. Add 2 tablespoons of butter, ¼ cup of milk, salt, pepper, and nutmeg. Mash until creamy, then fold in the kale and shallot mixture.
