Step-by-Step Instructions
  1. Begin by peeling and chopping your starchy potatoes into 1-inch cubes. Place them in a large pot and cover with cold water, then add a pinch of salt and a couple of bay leaves.
  2. Bring the pot of potatoes to a gentle boil, adjusting the heat to maintain a steady simmer. Cook for about 20 minutes or until fork-tender, then drain and remove bay leaves.
  3. While the potatoes are boiling, heat 2 tablespoons of butter or olive oil in a skillet. Add the chopped shallots and minced garlic, sautéing for 1-2 minutes until softened. Add the chopped kale with ¼ cup of water, cover and steam until wilted, about 4-5 minutes.
  4. Return the drained potatoes to the pot on low heat. Add 2 tablespoons of butter, ¼ cup of milk, salt, pepper, and nutmeg. Mash until creamy, then fold in the kale and shallot mixture.
  5. Cook the smoked sausage until heated through and browned, about 5-7 minutes on medium heat. Ensure they're cooked thoroughly for best flavor.
  6. Spoon the creamy mashed potato and kale mixture onto plates, slice the sausage, and place atop the mash. Optionally drizzle with olive oil before serving warm.
