Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and coat a medium baking dish with a layer of marinara sauce.
  2. Chop butternut squash and place in a roasting pan with garlic cloves drizzled with olive oil. Roast for 25-30 minutes.
  3. Mash the roasted squash and garlic in a bowl, then mix in ricotta, mozzarella, Parmesan, salt, pepper, and dried sage.
  4. Boil salted water in a large pot and cook the lasagna noodles until al dente, then drain and lay flat on a towel.
  5. Spread filling on each noodle, roll them up tightly, and place seam-side down in the baking dish.
  6. Pour marinara sauce over the roll-ups and sprinkle with remaining mozzarella cheese.
  7. Cover with foil and bake for 25 minutes, then remove foil and bake for an additional 10-15 minutes until cheese is bubbly.
  8. Let cool for 5-10 minutes before serving, garnished with fresh parsley.
