Preparation
  1. Gather all ingredients and tools. Arrange rice paper wrappers, crab meat, cream cheese, green onions, and soy sauce within easy reach.
  2. In a mixing bowl, combine cream cheese, crab meat, green onions, and soy sauce. Mix until creamy and well-combined.
  3. Fill a shallow dish with warm water and soak each rice paper wrapper for 10-15 seconds until pliable.
  4. Place a soaked wrapper on a clean surface and spoon about one tablespoon of filling into the center. Fold the edges over the filling.
  5. Preheat oven to 400°F (200°C). Arrange assembled rangoons on parchment-lined baking sheet and lightly spray the tops with oil.
  6. Bake for 15-20 minutes until golden brown and crispy.
  7. Serve with dipping sauces such as sweet and sour or spicy mayo.
