- In a mixing bowl, combine 8 oz of room temperature cream cheese, 1/4 cup of powdered sugar, and 1 tsp of vanilla extract. Beat until smooth and creamy, about 2-3 minutes.
- Carefully rinse and dry the strawberries. Using a small knife or melon baller, gently remove the tops and hollow out each strawberry.
- Transfer the cream cheese mixture into a piping bag or resealable bag. Pipe the filling into each hollowed strawberry, stopping before they overflow.
- Press a few fresh blueberries into the cream cheese filling atop each strawberry.
- Consider adding a dollop of whipped cream on top of each filled strawberry for a beautiful finish.
- Serve immediately or refrigerate in an airtight container for a couple of hours before serving.
