For the Pasta Salad
  • 8 oz Rotini Pasta or similar-sized pasta
  • 2 cups Red Grapes halved
  • 2 cups Cooked Chicken can use rotisserie or canned chicken
  • 1/2 cup Sliced Almonds can substitute with pecans or walnuts
  • 1/4 cup Green Onions finely chopped
For the Dressing
  • 1 cup Creamy Poppy Seed Salad Dressing recommended brand: Brianna's
  • 1/2 cup Mayonnaise full-fat is preferred
  • 2 tblsp White Wine Vinegar can substitute with apple cider vinegar
  • to taste Salt
  • to taste Pepper

Method
 

Preparation Steps
  1. Cook pasta in a large pot of salted boiling water according to package instructions, about 8-10 minutes. Drain and rinse under cold water.
  2. While pasta cooks, chop cooked chicken, halve grapes, and slice green onions. Place in a large mixing bowl.
  3. In a separate bowl, whisk together dressing ingredients until smooth and well combined.
  4. Add cooled pasta, chicken, grapes, and green onions to the mixing bowl. Fold in sliced almonds and pour dressing over. Toss until well coated.
  5. Serve immediately or chill in the refrigerator for 30 minutes before serving.
