Ingredients
  

For the Filling
  • 1 lb Ground Beef Can substitute with ground turkey or chicken
  • 1 medium Finely Diced Onion Yellow or white onions work best
  • 1 cup Frozen Mixed Vegetables Fresh veggies can also be used
  • 2 cloves Minced Garlic Garlic powder can be substituted
  • 2 tbsp Tomato Paste
  • 1 tbsp Worcestershire Sauce
  • 1 cup Shredded Cheddar Cheese Sharp cheddar gives extra flavor
For the Crust
  • 2 sheets Refrigerated Pie Crusts Store-bought or homemade
  • to taste Salt
  • to taste Pepper
  • 1 tsp Paprika
  • 2 tbsp Olive Oil For sautéing

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 12-cup muffin tin.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the onion and cook until softened.
  3. Add the ground beef to the skillet and brown thoroughly, draining excess grease.
  4. Stir in the tomato paste, Worcestershire sauce, salt, pepper, and paprika and simmer.
  5. Make a cornstarch slurry with 1 tablespoon of cornstarch and 2 tablespoons of water to thicken the filling.
  6. Roll out the pie crusts and cut circles to fit the muffin cups, fill with meat mixture and top with cheese.
  7. Seal the pies with smaller rounds of crust and make small slits for venting.
  8. Brush tops with a beaten egg and bake for 20-25 minutes until golden brown.
  9. Let cool for 5 minutes before removing from the tin and serve warm.
