Base
  • 2 pieces Flatbreads Store-bought naan, pita, or lavash
  • 2 tablespoons Olive Oil For brushing
Sauce
  • 1 cup Spinach Pesto Store-bought or homemade
Toppings
  • 1 cup Mozzarella Torn or shredded
  • 1 cup Tomatoes Halved, fresh or well-drained canned
  • 1 small Red Onion Thinly sliced
  • 1/2 cup Black Olives Sliced
  • 1/2 cup Artichoke Hearts Canned or jarred, drained
  • 1/2 cup Feta Cheese Crumbled
  • 1 teaspoon Oregano Dried or fresh
  • 1/2 teaspoon Red Pepper Flakes Adjust to taste
  • 1 teaspoon Salt To taste
Garnishing
  • 1/4 cup Fresh Parsley Chopped
  • 1 cup Arugula Optional

Method
 

Steps
  1. Preheat your oven to 500°F (260°C) and heat a baking sheet inside.
  2. Prepare your ingredients: slice red onion, halve tomatoes, and drain artichokes.
  3. Lay out flatbreads on the hot baking sheet and brush one side with olive oil.
  4. Spread spinach pesto over the oiled side of each flatbread.
  5. Distribute torn mozzarella over the pesto on each flatbread.
  6. Layer drained artichokes, olives, and red onions on top of the mozzarella.
  7. Finish with halved tomatoes, crumbled feta, oregano, red pepper flakes, and salt.
  8. Bake for 5-10 minutes, until edges are golden and cheese is bubbly.
  9. Cool for a couple of minutes and garnish with parsley and arugula.
  10. Drizzle olive oil over flatbreads before slicing them into portions.
