- Preheat your oven to 500°F (260°C) and heat a baking sheet inside.
- Prepare your ingredients: slice red onion, halve tomatoes, and drain artichokes.
- Lay out flatbreads on the hot baking sheet and brush one side with olive oil.
- Spread spinach pesto over the oiled side of each flatbread.
- Distribute torn mozzarella over the pesto on each flatbread.
- Layer drained artichokes, olives, and red onions on top of the mozzarella.
- Finish with halved tomatoes, crumbled feta, oregano, red pepper flakes, and salt.
- Bake for 5-10 minutes, until edges are golden and cheese is bubbly.
- Cool for a couple of minutes and garnish with parsley and arugula.
- Drizzle olive oil over flatbreads before slicing them into portions.
