  • 1 pound lean ground beef
  • 1 medium yellow onion quarter and finely chopped
  • 1/4 cup fresh parsley finely chopped
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon seven spice or allspice as a substitute
  • 1/2 teaspoon cayenne pepper adjust based on spice tolerance
For Serving
  • 4 pieces pita bread soft
  • 1 cup hummus for dipping
  • 1 bowl side salad like Fattoush or Tabbouleh

Method
 

Step-by-Step Instructions
  1. Pulse the quartered medium yellow onion and fresh parsley in a food processor until finely chopped. Set aside.
  2. In a large bowl, combine the lean ground beef, onion-parsley mixture, salt, black pepper, seven spice, and cayenne pepper. Mix thoroughly.
  3. Mold the meat mixture around skewers into cylindrical shapes about 1 to 1.5 inches thick.
  4. Preheat your grill to medium-high heat (400°F to 450°F) and oil the grates.
  5. Grill the kebabs for approximately 4 minutes on each side until the internal temperature reaches 160°F.
  6. Remove kebabs from the grill and let rest for a minute. Serve with warm pita, hummus, and side salad.
