- In a medium bowl, whisk together mayonnaise, red wine vinegar, olive oil, dried oregano, garlic powder, salt, and black pepper until smooth.
- In a large bowl, toss together the shredded lettuce, sliced red onion, and banana pepper rings. Drizzle the dressing over and mix gently.
- Preheat oven or air fryer to 350°F (175°C). Slice hoagie rolls and place provolone cheese on the bottom halves. Toast for about 2 minutes.
- After toasting, layer salami, pepperoni, and ham (or mortadella) over the melted provolone.
- Spoon the slaw over the meats and layer any additional vegetables as desired. Drizzle with extra dressing if needed.
- Place the top halves of rolls onto the sandwich, press down, and cut in half if desired.
