- In a medium bowl, whisk together balsamic vinegar, extra-virgin olive oil, Dijon mustard, honey (if using), minced garlic, salt, and pepper. Coat the chicken breasts and let marinate for 10-12 minutes.
- Preheat a grill pan over medium heat. Slice the rolls in half and lightly toast. Place provolone and mozzarella on bottom halves.
- Grill the marinated chicken for 3-4 minutes on each side until cooked through, then slice into strips. Layer on cheese and sprinkle with basil and thyme.
- Return the assembled sandwiches to the grill pan and cover with a lid. Grill for 2-3 minutes until bread is crispy and cheese is melted.
