- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, red onion, garlic, egg, parsley, oregano, lemon zest, salt, and pepper. Mix gently.
- Shape the mixture into 1.5-inch meatballs and place them on the baking sheet.
- Bake the meatballs for 20-25 minutes until golden brown and reach an internal temperature of 165°F (74°C).
- While the meatballs bake, bring broth to a boil in a pot and add orzo. Cook according to package instructions for 8-10 minutes.
- Return the drained orzo to the pot, stir in olive oil, feta cheese, parsley, lemon juice, salt, and pepper.
- To serve, create a bed of lemon orzo on each plate and top with meatballs. Garnish with parsley and lemon wedges.
