Ingredients
  

For the Meatballs
  • 1 lb Ground Chicken or ground turkey for a leaner option
  • 1 cup Breadcrumbs panko for a crispier crust
  • 1/4 cup Parmesan Cheese nutritional yeast for dairy-free
  • 1 medium Red Onion finely chopped; shallots as alternative
  • 2 cloves Garlic minced; use fresh for more flavor
  • 1 large Egg flax egg for vegan substitute
  • 1/4 cup Fresh Parsley chopped; cilantro as substitute
  • 1 tbsp Dried Oregano Italian seasoning can be used
  • 1 tbsp Lemon Zest fresh lemon juice can be added too
For the Orzo
  • 1 cup Orzo Pasta quinoa as gluten-free option
  • 2 cups Vegetable or Chicken Broth low-sodium preferred
  • 2 tbsp Olive Oil extra virgin elevates flavor
  • 1/2 cup Feta Cheese or goat cheese for milder taste
  • 1 tbsp Lemon Juice fresh lime juice for a twist

Method
 

Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, red onion, garlic, egg, parsley, oregano, lemon zest, salt, and pepper. Mix gently.
  3. Shape the mixture into 1.5-inch meatballs and place them on the baking sheet.
  4. Bake the meatballs for 20-25 minutes until golden brown and reach an internal temperature of 165°F (74°C).
  5. While the meatballs bake, bring broth to a boil in a pot and add orzo. Cook according to package instructions for 8-10 minutes.
  6. Return the drained orzo to the pot, stir in olive oil, feta cheese, parsley, lemon juice, salt, and pepper.
  7. To serve, create a bed of lemon orzo on each plate and top with meatballs. Garnish with parsley and lemon wedges.
