Sandwich Filling
  • 4 slices Irish bread or whole grain/gluten-free bread
  • 1 tablespoon butter for spreading on bread
  • 6 large hard boiled eggs mashed
  • 1 medium Roma tomato diced, seeds and pulp removed
  • 2 stalks green onions thinly sliced
  • 1 cup butter lettuce shredded
  • 1/2 cup mayonnaise or salad cream for a traditional touch

Method
 

Preparation
  1. Begin by dicing a Roma tomato, removing the seeds and pulp. Mix it with the mashed hard-boiled eggs to create a creamy base.
  2. Thinly slice green onions and shred butter lettuce. Add these to the egg mixture and stir gently.
  3. Mix the egg mixture with mayonnaise or salad cream until creamy. Season with salt and pepper to taste.
  4. Spread butter on one side of each slice of bread.
  5. Spread half of the egg filling on the unbuttered side of one slice. Top with a buttered slice of bread.
  6. Trim the crusts and cut the sandwiches diagonally into triangles.
  7. Serve with tea and potato chips.
