  1. Begin by gathering all your ingredients for the Chicken Avocado Melt Sandwich. Preheat your oven to 350°F (175°C). Slice the ripe avocado in half, remove the pit, and scoop the flesh into a bowl to mash with a squeeze of lime juice.
  2. Lay out two slices of your chosen bread. Spread a generous layer of the mashed avocado on one slice. Layer the roasted chicken evenly over the avocado, followed by a slice of cheddar cheese. Add fresh lettuce or spinach.
