  • 2 cups Cottage Cheese Use full-fat for best texture
  • 3 large Eggs Bring to room temperature
  • 1 cup Old Fashioned Rolled Oats Avoid quick oats
  • 1 medium Ripe Banana The spottier, the sweeter
  • 1/4 cup Maple Syrup Substitute with honey if desired
  • 1 teaspoon Baking Soda
Topping
  • 1 cup Fresh Blueberries Frozen can be used without thawing

Method
 

Baking Instructions
  1. Preheat your oven to 350°F (180°C) and grease four 2-cup oven-safe bowls with non-stick spray.
  2. Blend cottage cheese, eggs, oats, banana, maple syrup, and baking soda in a high-speed blender until smooth.
  3. Pour the mixture into the greased bowls, filling each about two-thirds full and press blueberries into the batter.
  4. Bake for 35-40 minutes until golden brown and firm; a toothpick should come out clean.
  5. Allow to cool for at least 10 minutes before serving.
