For the Pasta

Method
 

Step-by-Step Instructions
  1. Marinate the chicken by mixing with jerk seasoning, cover, and refrigerate for at least 3 hours.
  2. Boil a pot of salted water, add pasta and cook until al dente, about 6-8 minutes. Drain and set aside.
  3. In a skillet, heat olive oil and sear marinated chicken for 3-4 minutes each side until browned. Set aside.
  4. Sauté bell peppers, scotch bonnet, and garlic in the same skillet for 1-2 minutes.
  5. Add smoked paprika and flour, stir for a minute, then whisk in cream, stock, and wine, cooking until thickened.
  6. Combine seared chicken with sauce and thyme, simmer for 15-18 minutes, then stir in pasta.
  7. Serve garnished with scallions or Parmesan if desired.
