  • Reserved Crust Mixture sprinkle over filling

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 350°F (175°C) and prepare an 8x8-inch baking dish with parchment paper.
  2. In a mixing bowl, combine all-purpose flour, rolled oats, salt, and brown sugar. Cut in cold butter until the mixture resembles coarse crumbs.
  3. Press half of the crust mixture into the bottom of the lined baking dish and bake for about 15 minutes until lightly browned.
  4. In a saucepan, mix chopped apricots, honey, vanilla extract, lemon juice, ground cinnamon, and water. Simmer for 10-12 minutes until thick.
  5. Spread the apricot filling evenly over the baked crust and sprinkle the reserved crust mixture over the top.
  6. Return to the oven and bake for an additional 20-25 minutes until the topping is golden brown.
  7. Allow to cool completely in the dish before cutting into squares.
