- Preheat the oven to 350°F (175°C) and prepare an 8x8-inch baking dish with parchment paper.
- In a mixing bowl, combine all-purpose flour, rolled oats, salt, and brown sugar. Cut in cold butter until the mixture resembles coarse crumbs.
- Press half of the crust mixture into the bottom of the lined baking dish and bake for about 15 minutes until lightly browned.
- In a saucepan, mix chopped apricots, honey, vanilla extract, lemon juice, ground cinnamon, and water. Simmer for 10-12 minutes until thick.
