- Preheat your oven to 350°F (175°C) and line a cupcake pan with 12 liners.
- In a bowl, sift together flour, cocoa powder, baking powder, baking soda, salt, and espresso powder. Set aside.
- Cream butter and sugar until light and fluffy in a large mixing bowl.
- Beat in egg, yolk, and vanilla extract until pale and fluffy.
- Gradually mix in milk and sour cream until just combined.
- Fold in dry ingredients to the wet mixture until just combined.
- Spoon batter into liners filling each about 3/4 full. Bake for 17-20 minutes or until a toothpick comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
- For ganache, heat cream until steaming, pour over chocolate, let it sit, then stir in raspberry preserves.
- Beat softened butter until pale, then mix in powdered sugar, freeze-dried raspberries, raspberry preserves, and vanilla.
- Hollow out centers of cooled cupcakes, fill with ganache, and frost with raspberry buttercream. Decorate with raspberries.
