Preparation Steps

  2. Preheat oven to 350°F (175°C). Press half of the crust mixture into an 8x8-inch baking pan. Bake for 15 minutes until light golden brown.
  3. In a medium saucepan, combine chopped apricots, honey, vanilla extract, lemon juice, ground cinnamon, and a splash of water. Simmer until the mixture is jam-like, about 10-12 minutes.
  4. Spread apricot filling evenly over baked crust. Sprinkle reserved topping on the filling.
  5. Return to oven and bake for an additional 20-25 minutes until golden brown and bubbly. Allow to cool completely.
