  • 6 cups mixed shredded cabbage (green and red) substitute with napa cabbage if desired
  • 1 large carrot grated
  • 0.5 medium red onion thinly sliced
  • 1 cup fresh cilantro roughly chopped
  • 1 medium jalapeño pepper seeded and minced, adjust for heat
For the Dressing
  • 2 tablespoons lime juice freshly squeezed
  • 0.25 cup olive oil or avocado oil
  • 1 tablespoon honey or agave nectar
  • 0.5 teaspoon ground cumin

Method
 

Preparation Steps
  1. Thinly slice both the green and red cabbage and place in a large mixing bowl.
  2. Grate one large carrot and add to the cabbage.
  3. Slice half of a red onion and soak in cold water for 5 minutes, then add to the bowl.
  4. Chop a handful of cilantro and add to the mix.
  5. Mince one jalapeño and mix it into the vegetables.
  6. In a separate bowl, whisk together lime juice, olive oil, honey, and ground cumin.
  7. Pour the dressing over the vegetable mixture and toss to coat.
  8. Season with salt and pepper to taste and let rest for 15 minutes before serving.
