Step-by-Step Instructions
- Start by drying 2 lbs of boneless, skinless chicken breasts with paper towels to remove excess moisture. Once dry, rub them generously with a mixture of salt, black pepper, garlic powder, and onion powder.
- Place the seasoned chicken breasts in a 6-quart slow cooker, arranging them in a single layer for even cooking. Next, sprinkle the minced garlic and chopped sun-dried tomatoes evenly over the top of the chicken.
- Pour 1 cup of chicken broth carefully around the chicken in the slow cooker, ensuring it doesn't wash away the seasonings.
- Cook the chicken on LOW for 3-4 hours or on HIGH for 2-3 hours, depending on your schedule.
- Once the chicken is perfectly cooked, shred it directly in the crockpot using two forks.
- Stir in 1 cup of heavy cream and 1/2 cup of grated Parmesan cheese into the shredded chicken in the slow cooker.
- Finally, add in 1/4 cup of chopped fresh basil, stirring just until incorporated.
