Step-by-Step Instructions for Crockpot Chicken Fajitas
  1. Prepare the Ingredients: Slice the chicken breast into 1-inch strips and set aside. Thinly slice the red, yellow, and green bell peppers along with the yellow onion. Mince the garlic cloves.
  2. Layer the Salsa and Vegetables: In your crockpot, pour half of the salsa, layer with half of the sliced peppers, followed by half of the sliced onions. Sprinkle minced garlic over the veggies.
  3. Add Chicken and Seasonings: Place sliced chicken strips on top of the veggies. Sprinkle fajita seasoning and chili powder over the chicken, mixing gently.
  4. Finish Layering and Add Lime Juice: Add remaining salsa over chicken, layer rest of sliced peppers and onions. Drizzle lime juice evenly over the mixture.
  5. Cook in the Crockpot: Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours. Ensure chicken reaches 165°F internal temperature.
