- Prepare the Ingredients: Slice the chicken breast into 1-inch strips and set aside. Thinly slice the red, yellow, and green bell peppers along with the yellow onion. Mince the garlic cloves.
- Layer the Salsa and Vegetables: In your crockpot, pour half of the salsa, layer with half of the sliced peppers, followed by half of the sliced onions. Sprinkle minced garlic over the veggies.
- Add Chicken and Seasonings: Place sliced chicken strips on top of the veggies. Sprinkle fajita seasoning and chili powder over the chicken, mixing gently.
- Finish Layering and Add Lime Juice: Add remaining salsa over chicken, layer rest of sliced peppers and onions. Drizzle lime juice evenly over the mixture.
- Cook in the Crockpot: Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours. Ensure chicken reaches 165°F internal temperature.
- Shred and Serve: Shred the chicken in the crockpot with two forks. Serve warm with tortillas and toppings.
