  1. Trim excess fat from the chicken thighs and place them in the bottom of the slow cooker.
  2. In a mixing bowl, combine light brown sugar, soy sauce, bourbon, apple cider vinegar, ground ginger, honey, red pepper flakes, and minced garlic. Whisk until well-blended.
  3. Pour the sauce over the chicken thighs, ensuring they are fully coated. Cook on high for 4 hours or low for 6 hours.
  4. After cooking, remove the chicken and chop into bite-sized pieces.
  5. Mix cornstarch with water until dissolved, then add to the sauce in the slow cooker to thicken.
